In culinary school, Brad Long learned that presentation matters. How a meal looks can shape the way it’s received. Often, the ingredients you already have on hand will do just fine, with a little extra creativity, improvisation … and time.
Each day Brad spends in our kitchen brings new opportunities to turn something ordinary and unnoticed into something memorable. It’s taking donated grocery items and creating meat and cheese trays like you’d find at an upscale banquet. Or transforming a routine bag of coleslaw by adding vinegar and oil, or mayonnaise, and experimenting with whatever herbs and spices happen to be on hand. Or creating a special French toast bake for hungry, homeless people at breakfast.
